Sauteed Broccoli with Pine Nuts

Servings: 6 to 8
Prep Time: 15 minutes
INGREDIENTS
4 cups broccoli florets
3 to 4 tbsp olive oil
1 clove garlic, minced
1 tsp lemon zest
1 tsp lemon juice
1/4 cup pine nuts, toasted
Parmesan cheese, shredded

DIRECTIONS
1. In a large skillet, heat olive oil over medium heat. Add garlic and saute for about 30 seconds, until just fragrant.
 
2. Add lemon zest and juice to the oil mixture. Add broccoli and toss lightly until just coated. Cook until broccoli is bright green in color, but still crisp. Season with salt and pepper to taste, add pine nuts and cheese, toss gently.
